Our general view would be that you don't mess with a Negroni - done well, it is the perfect drink. But. The first time we added Yuzushu to a Negroni, we got very excited. Now, multiple recipes later, we can offer you the chance to try one.
Yuzu is an Asian citrus fruit commonly used in Japanese and Korean cuisine. With a western palate, it's not easy to put your finger exactly on the flavour, but is highly floral and somewhere between a grapefruit and a lemon.
Yuzushu (yuzu sake) is the result of macerating ginjo-shu sake with yuzu fruit. The resulting drink is crisp, zesty, and acidic.
We've used a heavy aniseed vermouth and a strong, classy, gin heavy with juniper as the base, and then added a tart amaro to balance out the sweetness.
