We use a dark rum with enough character to hold its own against the vermouth, add Angostura bitters, and age the combination for six weeks. The result is fuller and softer than a classic Manhattan. The rum’s natural sweetness means the vermouth does not have to work as hard, and the whole thing settles into something warmer and more languorous.
