Dry, complex, and impeccably composed. Old Tom gin, fino sherry, and dry vermouth: a Martini for people who have had a lot of Martinis.

Tuxedo Club, New York, circa 1893.

Old Tom gin, dry vermouth, fino sherry and absinthe. ABV 29.1%

One 75ml serving of Tuxedo contains 169 calories

The Tuxedo was born at the Tuxedo Club in Upstate New York in the 1890s, at the same historical moment the Martini was establishing itself. They share the same architectural DNA, gin and vermouth at the centre with something bitter or aromatic to complete it. The Tuxedo’s fino sherry gives it a salinity and complexity that a straight Martini does not have.

We use Old Tom gin: warmer and slightly sweeter than London Dry, the style of spirit that preceded it. The finest fino sherry we can source. A dash of absinthe to finish. Six weeks of ageing.

This is one of the more sophisticated drinks we make. We make it for the people who know that.

Serve straight up in a chilled coupe. Garnish with a lemon twist.
