Born in the 1890s at the legendary Tuxedo Club in Upstate New York (also the birthplace of the tail-less dinner jacket). This drink is an early riff on a Martini that got a life of its own and now stands alone as one of the great, if largely undiscovered, cocktail treats.
Old Tom gin is a warm, malty, sweeter spirit. Layering in dry vermouth and the driest of sherries is really interesting on the tongue and pretty unique. Finishing the drink with absinthe wraps up a journey that is a long way from nose to tail.
Best served straight from the freezer, maybe with a cherry.
